When temperatures are that high, I enjoy having a refreshing lunch. Not too carb heavy to make me tired and yet still filling.

Having some leftover mint chili meat balls from dinner, I decided to make some raw zoodles marinated in this spinach moringa pesto. Because I don’t cook the pesto, it is packed with all the nutrients and health benefits moringa offers. I’m talking about the benefits of moringa in detail below but I can already tell you: there’s a reason why it is called “superfood”.

The combination of refreshing lemon juice and the taste of basil and spinach intensified by adding moringa powder goes perfectly along with those minty meat balls.

I served the zoodles with some sauted mushrooms, spring onion and fresh and crispy red bell pepper. Using frozen spinach adds this extra cooling kick which I was desperate of while sitting on my balcony feeling sluggish and dried out.

  • 3 cubes frozen spinach defrosted/3 Würfel TK-Spinat aufgetaut 125g
  • or fresh spinach/oder frischer Spinat
  • 2 g moringa powder/Moringa Pulver
  • 4 basil stems with leaves/Zweige Basilikum
  • half a garlic clove/halbe Knoblauchzehe
  • juice of half a lemon/Saft einer halben Zitrone
  • 1 tablespoon olive oil/1 EL Olivenöl 10g
  • optimal: roasted pinenuts/geröstete Pinien
  • salt and pepper/Salz und Pfeffer


  1. Blend all ingredients in a food processor./Alle Zutaten in einer Küchenmaschine zu einem cremigen Pesto verarbeiten.
