Lavender peach muffins

Another sunny Sunday and what is better than to celebrate with lavender peach muffins which will remind you of lavender fields at french Provence. Combined with overripe and very sweet peach pieces and coconut this muffins are a perfect summer holiday treat! For those vegan folks out there – yes, the recipe is vegan and paleo!

Lavender Peach Coconut Muffins

Ingredients

  • 20 g coconut flour/Kokosmehl
  • 20 g almond flour/Mandelmehl
  • 20 g plantain flour/Bananenmehl
  • 30 g unsweetened apple-apricot sauce/Apfel-Aprikosenmark
  • 5 g baking powder/Backpulver
  • baking soda/Natron
  • splash/Schuss apple cider vinegar/Apfelessig
  • 100 ml boiled water/kochendes Wasser
  • vanilla/Vanille
  • Sweetener of choice/Süße nach Wahl I used stevia/ich verwende reines Steviapulver
  • 1 teaspoon/TL lavender/Lavendel
  • coconut chips/Kokoschips
  • small or half a nectarine or peach/kleine oder halbe Nektarine oder Pfirsich

Instructions

  1. Preheat the oven at 180' C top- and bottom-heat./Den Ofen auf 180 Grad Ober-/Unterhitze vorheizen.

  2. Mix all ingredients apart from some peach slices and coconut chips and fill the dough into muffin tins./Alle Zutaten außer einiger Pfirsichstücke und Kokoschips vermengen und in Muffinförmchen füllen.

  3. Top with leftover peach pieces and coconut chips and some lavender and bake in the oven for 30 minutes until golden./Die restlichen Pfirsichstücke, Kokoschips und ein bisschen Lavendel darauf geben und für 30 Minuten goldbraun backen.
