Pumpkin maca waffles – paleo

It’s waffle time! Fall calls for more pumpkin recipes, so here you go with those paleo pumpkin maca waffles.

The combination of slightly sweet pumpkin and caramelly maca goes perfectly along together. I topped my waffles with even more maca: just mixed almond yoghurt with a tsp maca, a pinch of cinnamon and some stevia. And of course some fresh fruit and my beloved bee pollen.

Depending on how sweet you like your waffles, you might want to add a bit of sweetener. I personally feel like the sweetness coming from my favorite salted maca caramel protein* is enough but sometimes I just add a pinch of pure stevia powder*.

Ingredients

  • 20 g plantain flour/Bananenmehl or another starchy flour/oder ein anderes stärkehaltiges Mehl
  • 40 g salted maca caramel protein/Salted Maca Caramel Protein or any other vegan (& paleo) Protein or almond flour/oder ein anderes veganes (& paleo) Protein oder Mandelmehl
  • 1 tbsp/EL gelatinized maca/gelatiniertes Macapulver
  • 20 g coconut flour/Kokosmehl
  • 80 g pumpkin sauce/Kürbispüree I buy it in the babyfood section/kaufe ich in der Babynahrungsabteilung
  • 50 ml egg whites/Eiklar or 1 egg/oder ein Ei
  • vanilla/Vanille
  • sweetener if necessary/gegebenenfalls Süße
  • 1 tsp baking soda/Natron
  • 1 tsp apple cider vinegar/Apfelessig

Instructions

  1. Mix all ingredients with 160ml water or nut milk, let ist for a few minutes and bake waffles in your waffle maker.

  1. Okay, I was unable to make waffles out of this dough (why ever), buuuuuuuuut I put the dough in a silicon form and baked it in the oven and served it with some coconut yoghurt and a drizzle of almond butter on top! Amazing! Sometimes something good resolves out of a mistake. 🙂
