Ginger. Carrots. Nuts. A hint of a sweet juicy apple. Cinnamon.

Someone else dreading for lukewarm paleo and vegan muffins straight from the oven? For me those muffins was the most comforting breakfast on a rainy and cloudy morning for a long time. With a cup of tea, some relaxing music and sitting in the bed snuggled in a cozy blanket a perfect weekend morning is complete.

I hope you can enjoy those muffins as I did. Take some time for yourself! Don’t neglect your body’s voice and its demand for some rest from time to time. Even if it is only for a two hour morning routine on a weekend where you can spend time just being you.

Carrot ginger muffins - vegan

  • 50 g grated carrot/geraspelte Karotte
  • 20 g unsweetened apple sauce/Apfelmark
  • 30 g almond flour/Mandelmehl
  • 10 g ground almonds/gemahlene Mandeln
  • 30 g tigernut flour/Tigernussmehl
  • 5 g coconut flour/Kokosmehl
  • 3 g flex seed/Leinsamen geschrotet
  • 5 g baking powder/Backpulver
  • baking soda/Natron
  • splash/Schuß apple cider vinegar/Apfelessig
  • 80 ml almond milk/Mandelmilch depending on your coconut flour more or less/je nach Kokosmehl mehr oder weniger
  • sweetener of choice/Süße nach Wahl
  • grated ginger/geriebener Ingwer
  • cinnamon/Zimt
  • dash/Prise salt/Salz
  • 10 g almond butter/Mandelmus works without too/geht auch ohne


  1. Preheat the oven at 180' C top- and bottom-heat./Den Ofen auf 180 Grad Ober-/Unterhitze vorheizen.

  2. Mix all ingredients together and fill in muffin tins (silicone ones work best)./Alle Zutaten vermengen und in Muffinförmchen füllen (Silikon funktioniert am besten).

  3. Bake for about 25 minutes until golden./Für etwa 25 Minuten goldbraun backen.

  4. Let cool down completely before getting them out of the tin./Am besten komplett auskühlen lassen bevor man sie aus den Förmchen nimmt.
