Coffee brownie soufflé – paleo & vegan

It’s currently raining outside and I’m wearing a sweater not motivated to leave my flat. Satisfied from a heart warming breakfast. Waking up on such a bad weather Sunday morning, left me wanting to stay in bed not leaving the cozy warmth.

What finally got me out of bed was the thought of a warm rich chocolaty soufflé for breakfast. That’s the story of this delicious paleo and vegan coffee brownie soufflé. I never drink coffee and actually don’t like the taste at all but apart from its awakening effect, the espresso shot goes perfectly along with the caramel taste of carob and with nuts and chocolate. Topped with my easy three ingredients chocolate sauce and enjoyed warm this was a perfect Sunday morning!

  • 35 g ground hazelnut/gemahlene Haselnüsse
  • 15 g ground flex seed/Leinsamen geschrotet
  • 5 g raw cacao/Rohkakao
  • 5 g carob powder/Carobpulver or more cacao powder/oder mehr Kakaopulver
  • 10 g coconut flour/Kokosmehl
  • 20 g almond flour/Mandelmehl
  • 100 g grated zucchini/geraspelte Zuchini
  • 70 ml strong, black coffee/schwarzer, starker Kaffee
  • 5 g baking powder/Backpulver
  • 40 g date syrup/Dattelsirup or rice, agave, maple syrup/oder Reis-, Agaven-, Ahornsirup
  • 10 g hazelnut butter/Haselnussmus
  • splash/Schuss apple cider vinegar/Apfelessig


  1. Preheat the oven at 180' C top- and bottom-heat./Den Ofen auf 180 Grad Ober-/Unterhitze vorheizen.

  2. Prepare a flex seed egg using the round flex seed and 2 tablespoons of water and let sit for 15 minutes./Ein Leinsamenei (15g mit 2 EL Wasser) 15 Minuten quellen lassen.

  3. Mix all ingredients and fill into a soufflé pan. Top with hazelnuts./Alle Zutaten vermengen und in eine Soufflé Form füllen. Ein paar Haselnusscheiben darauf verteilen.

  4. Bake for about 25 minutes./Für etwa 25 Minuten backen.

  5. Best served warm with homemade coconut sauce (mix coconut oil, raw cacao and vanilla)./Am besten warm mit selbstgemachter Schokosauce (Kokosöl, Rohkakao und Vanille verrühren) servieren.
