Christmas spices chocolate cake – paleo & vegan

If you are still looking for a last minute Christmas dessert, then you should definitely consider baking this paleo Christmas spices chocolate cake. There is also a vegan option available and if you can’t have nuts use chufa instead of almonds and almond flour.┬á

Cinnamon, vanilla, orange peel, gingerbread, clove and tonka bean – this recipe combines all my favorite Christmas spices. You can use whatever spices you like and give the recipe your own twist and create a unique taste explosion. But be careful, enjoy silent – otherwise your family will leave their Christmas cookies to get a piece of your cake. ­čśë

  • 45 g almond flour/Mandelmehl
  • 20 g ground almonds/gemahlene Mandeln
  • 15 g coconut flour/Kokosmehl
  • 10 g unsweetened cacao powder/unges├╝sstes Kakaopulver
  • 120 g pumpkin or apple sauce/K├╝rbisp├╝ree oder Apfelmark
  • splash of/ein Schuss apple cider vinegar/Apfelessig
  • baking soda and powder/Natron und Backpulver
  • orange peel/Orangenschale
  • vanilla, cinnamon, gingerbread spice, clove powder, tonka bean/Vanille, Zimt, Nelken, Lebkuchengew├╝rz, Tonkabohne
  • 70 ml egg whites or 2 small eggs/Eiklar oder 2 kleine Eier vegan: 1 flex egg/1 Leinsamenei
  • 50 ml liquid/Fl├╝ssigkeit
  • sweetener of choice/S├╝├če nach Wahl


  1. Preheat the oven at 200' C top- and bottom-heat./Den Ofen auf 200 Grad Ober-/Unterhitze vorheizen.

  2. Mix all cake ingredients with liquid (and egg yolk) /Die trockene Zutaten f├╝r den Kuchen Fl├╝ssigkeit (und Eigelb) verr├╝hren.

  3. Whisk the egg white until peaks form and fold into the dough. (If you don't have a mixer you can also add the whole egg or egg whites into the dough.)/Das Eiklar steif schlagen und unterheben. (Wer keinen Mixer hat oder Zeit sparen will, kann auch das ganze Ei oder das Eiklar einfach so unter den Teig r├╝hren.)

  4. Fill the dough into a mini (pound) cake tin or muffin tins (I prefer silicone)and bake for 35 minutes./Den Teig in eine Minikranz- oder Minikuchenform oder Muffinf├Ârmchen f├╝llen und 35 Minuten backen.

  5. Let cool down completely before removing from the tin and top with whatever you like./Komplett abk├╝hlen lassen und dann aus der Form holen und nach Lust und Laune verzieren.

  6. VEGAN OPTION: Mix all ingredients with a flax egg and use as much liquid as needed to get a thick dough./Die Zutaten mit einem Leinsamenei verr├╝hren und so viel Fl├╝ssigkeit verwenden wie n├Âtig, um einen dicken Teig zu bekommen.
