Chocolate raspberry cheesecake muffins – paleo & vegan

Spring is around the corner and what is there better than a paleo and vegan chocolate raspberry cheesecake muffin to celebrate?

The rich chocolate base with a cheesecake layer and refreshing berries on top almost even reminds me of a summer party.

I already made those muffins multiple times – sometimes I use my homemade cashew yoghurt and on other days I buy it. My favorite one when it comes to this recipe is this natural vanilla cashew yoghurt which doesn’t contain any added sugars but tastes deliciously sweet with this hint of vanilla and is really creamy!

Chocolate raspberry cheesecake muffins

Muffin dough/Muffinteig

  • 20 g almond flour/Mandelmehl or any other nut or seed flour/oder ein anderes Nuss-/Samenmehl
  • 10 g pea protein/Erbsenprotein or more almond flour/oder mehr Mandelmehl
  • 10 g ground almonds/gemahlene Mandeln
  • 15 g ground chufa/Erdmandelmehl or any other starchy flour/oder ein anderes stärkehaltiges Mehl
  • 10 g unsweetened cacao/ungesüsster Kakao
  • 50 g pumpkin or apple sauce/Kürbismus oder Apfelmark
  • a splash of/ein Schuss apple cider vinegar/Apfelessig
  • 0,5 teasp/TL baking soda/Backpulver
  • 40 ml almond milk/Mandelmilch
  • sweetener of choice/Süße nach Wahl I used yacon syrup/ich habe Yacon Sirup verwendet

Cheesecake layer/Käsekuchenschicht

  • 120 g cashew yoghurt/Cashewjoghurt
  • 5 g coconut flour/Kokosmehl
  • vanilla/Vanille
  • sweetener of choice/Süße nach Wahl I used pure stevia powder/ich habe reines Steviapulver verwendet
  • raspberries/Himbeeren


  1. Preheat the oven at 200' C top- and bottom-heat./Den Ofen auf 200 Grad Ober-/Unterhitze vorheizen.

  2. Mix all ingredients for the muffin dough and fill into muffin tins./Alle Zutaten für den Muffinteig vermengen und in Förmchen geben.

  3. Bake for 10 minutes./Für 10 Minuten backen.

  4. Mix all ingredients for the cheesecake layer apart from the raspberries./Alle Zutaten außer den Himbeeren für die Käsekuchenschicht vermengen.

  5. Put on top of the muffins, top with raspberries and bake for another 20 minutes./Die Käsekuchenschicht auf die Muffins geben, Himbeeren daraufgeben und nochmals für 20 Minuten backen.
