Vegan peach tarte

Ingredients

Crust

  • 80 g flour I used spelt but I think a glutenfree one would work, too
  • 20 g shredded coconut
  • 5 g coconut oil
  • 50 g unsweetened apple sauce
  • lemon peel
  • sweetener of choice or you use some dates or you go without if you don’t need it to be extra sweet

Filling

  • raspberry chia or fled seed meal jam
  • coconut yoghurt
  • peaches

Instructions

  1. Put all ingredients for the crust into a bowl and combine them using your hands. (If using dates, I would suggest using a food processor.)
  2. Press the crust dough into a pan (I used a silicone small heart.) and bake for about 10-15 at 190 degrees Celsius top and bottom heat until golden.
  3. Let the crust cool down and fill in the jam and then coconut yoghurt. Top it with peaches (or any other fruit.)

Recipe Notes

Definitely use fresh peaches for this recipe (I could just get hold of unsweetened canned ones). Another thing I have to mention here is that the chocolate combo was not the best (yet still delicious!). Next time I would use lemon or plain coconut yoghurt instead. Another option my parents suggested would be to use raspberries on top of the chocolate yoghurt instead of peaches.
